Course Details
Level 3
This course covers complex preparation and cooking techniques, building on and developing skills learnt at Level 2.
The principles of food safety supervision for catering– Learn how to oversee food safety practices in a catering environment, ensuring compliance with hygiene regulations and protecting customer health
Supervisory skills in the hospitality industry– Develop leadership and management abilities tailored to hospitality settings, including team coordination, problem-solving, and service excellence
Exploring gastronomy– Dive into the art and science of food, discovering culinary traditions, flavour combinations, and presentation techniques that elevate the dining experience
Advanced skills and techniques – In producing vegetable and vegetarian dishes, meat dishes, poultry and game dishes, fish and shellfish dishes
Advanced professional cookery – practical assessment
How will it be delivered and assessed?
You will be assessed with a range of practical tasks, synoptic practical tests, written assignments and complete short answer questions.
Entry requirements
Level 3 – 4 GCSEs at grade 4 or above including English and Maths
Progression from level 1 to 2 and from level 2 to level 3 would also require a pass at the lower-level vocational course.

Once you’ve completed a Level 3 qualification, you could progress into employment or further your studies with a degree-level qualification.
