Course Details
Level 2 Certificate in Professional Patisserie and Confectionery will help you to become qualified in this specialist subject. You will learn how to professionally make and finish various patisserie dishes, baked good and desserts, working in our fully equipped industry standard training kitchen and then serving them in our in house training restaurant, Elwell’s. You will also have the opportunity to study for your GCSE English and maths qualifications alongside the vocational aim, in order to progress to Level 3.

• Sponges, cakes and biscuits

• Catering operations, menu planning and costs
• Healthier foods and special diets

How will it be delivered and assessed?
Trips, visits & guest speakers - We will have both guest speakers from industry and take part in industry visits to restaurants such as Pipe&Glass and Stokes Coffee House in order to give you a real insight into working in the hospitality sector. You will also take part in work related activity in our restaurant, catering for coffee and cake events for external stakeholders such as local charities.
Entry requirements
Level 2 – 3 GCSEs at grade 3 or above, preferably including either English or Maths.
