Course Details

Level 2

You will develop the skills learnt at Level 1 and learn more about food preparation and further complex cooking techniques.

Cooking techniques – Cover fish and poultry dishes, Meat dishes, Soups, Vegetables, Pasta Dishes, Pastries, Desserts

Learn about the hospitality industry– Explore the wide range of roles and opportunities within hospitality, from front-of-house service to kitchen operations, and understand how the sector contributes to the economy

Build a CV and cover letter– Develop a professional CV and cover letter tailored to hospitality roles, helping you stand out to potential employers

Generate a personal development plan and tracking your progress– Create a personalised plan to set goals, monitor your growth, and reflect on your achievements throughout the course

Food safety and hygiene– Understand the importance of cleanliness and safety in food preparation, including how to prevent contamination and follow industry regulations

Cooking techniques– Learn a variety of cooking methods, from boiling and baking to grilling and sautéing, to prepare a range of dishes confidently

Preparing healthier foods– Discover how to make nutritious meals by using fresh ingredients, reducing fats and sugars, and catering to dietary needs

How will it be delivered and assessed?

You will be assessed with a range of practical tasks, synoptic practical tests, written assignments and complete short answer questions.

You’ll gain hands on experience not only on site but in local catering and hospitality placements available to students. You will train in cooking techniques and food preparation including fish, meat, poultry and pasta dishes, baking, patisserie and cake decorating as well as front-of-house hosting, restaurant skills and customer service.

We will enrich your experience on the course with a variety of visits, trips and guest speakers from industry to give you a realistic view of working in the sector. We also offer a Barista qualification to enhance your employability.

Entry requirements

Level 2 – 3 GCSEs at grade 3 or above, preferably including either English or Maths

Progression from level 1 to 2 and from level 2 to level 3 would also require a pass at the lower-level vocational course.

Your next steps...

You can progress onto Level 3 Catering & Hospitality.

You could get a job in the hospitality and catering industry, in Britain or abroad. You could work in a hotel, in a restaurant, in a public house or a canteen. You may even work at sea or join the uniformed services. The hospitality and catering industry employs more people worldwide than any other industry so there are excellent employment prospects.

However, many of our students enjoy the course and progress to further or higher study. Learners may also obtain a catering specific apprenticeship in the workplace.
